Presentation Description: There has been a lot of talk about processed foods lately due to the changes being made in the Department of Health and Human Services. You may have questions regarding these changes and if they are based on science or fear. Join us as we discuss the research on these different food products and how to decipher fact and fiction regarding processed foods, additives and oils.Presenter Bio: Stacie Ellis, PhD, RDN, LD, is the Registered Dietitian at the University of Texas at Arlington, where she provides nutrition consultations and education for the students and staff on campus. Stacie is the proud owner of EXCELLIS Nutrition, a company geared toward performance nutrition, weight management, disordered eating, and medical nutrition therapy. Stacie serves as a consulting dietitian for Wellness Concepts and Health Fairs Direct. She recently received her Doctoral degree in Nutrition with a minor in Kinesiology at Texas Woman's University. Her dissertation involved comparing a high-carbohydrate, low-fat diet to a low-carbohydrate, high-fat diet on performance in dancers. She has been interviewed with Women’s Health Magazine, The Oak Cliff Documentary, and Texas Metro News, and she also completed the Certificate of Training in Adult Weight Management Program on June 4-6, 2015.

Dance and public performance are two elements of human society that span across all cultures and peoples of the globe. This system of cultural expression often consists of detailed choreography and elaborate costumes, uniting our communities through shared connections and ritual presentation.For Latin America, dance is interwoven throughout the tapestry of their historical traditions. Beginning with the indigenous cultures of the Aztec, Inca, Maya, and Olmec, their celebratory carnivals and festivals evolved under the influence of European and African dance traditions to incorporate not only celebrational experiences but also used for expressions of faith, mourning, and even resistance.On view for the fall 2025 semester are a series of vibrantly painted and intricately decorated masks and dance costumes from Bolivia, Guatemala, and Mexico. They represent Latin America’s wide breadth of historical dance and parade traditions, ranging from the Bailé de los Animales to the annual Carnaval.Please join us throughout the semester to celebrate these works and their expressions of beauty, creativity, and connection through dance.It will be open Monday, September 8 – Thursday, November 20; 9am – 5pm. Curated by Jorge Baldor, historian, art collector, and founder of the Latino Arts Project, this densely layered exhibition centers on the centuries-long journey of the Gullah-Muscogo people and their culture - from West Africa to the eventual founding of the town of Nacimiento de los Negros, Mexico.Part art exhibition, part archival display, Baldor has paired artists working in diverse media with historical documents, maps and artifacts to tell "a story of resilience, culture and freedom."The exhibition also includes a selection of oil pastel on paper sketches by renowned contemporary artist Sedrick Huckaby who visited Mexico over a four-month period in 2023 to work on this portrait series of the present-day people of Nacimiento that depicts a community deeply connected to their history.

Whether you're interested in reducing textbook costs for students, customizing course materials, or publishing your own open scholarship, this workshop will introduce you to flexible pathways for using OER in your courses. We’ll discuss how to start small with adoption and adaptation, as well as opportunities for full-scale OER creation. Participants will also learn about UTA’s robust support network—including the UTA Libraries’ OER publishing tools and faculty grant programs—to help bring their ideas to life.Learning Outcomes:Upon completion of this session, participants will be able to: Define Open Educational Resources and explain their impact on teaching, learning, and access. Identify ways to adopt, adapt, or create OER in alignment with their teaching goals. Discover UTA-specific resources, including OER publishing support and faculty grant opportunities through the Libraries’ OER Grants Program (libguides.uta.edu/OERgrants). Develop a plan to begin integrating OER into a current or future course.
